Nothing gets feathers ruffled quicker than an ex-girlfriend. Here, we have an excerpt from Cassie’s Cowboy Crave where Cassie faces that very thing. A lonely ex who’s done a bit of baking for the man posing as Cassie’s newlywed groom, Shane. Cassie is not a great cook, and finds the woman’s gesture all the more annoying because of it.

“My pies are famous around here. Grant’s favorite is raspberry, so I took one of those to him, and brought an apple pie for Shane Bear, since that’s his favorite.”

“Shane Bear?’” Cassie was livid.

Natasha craned her neck forward, far over the pie... “I know this game,” she said in a sneering whisper. “Others might believe you’re married and in love, but I, for one, know why you’re really here.” She straightened up proudly. “So, why don’t you take this apple pie on into the house and leave it just like this until Shane gets home.” She took two steps closer and smiled. “He always said my pies put him under a spell, and I’m looking forward to the affects of it already.”

Cassie gulped down the lump forming in her throat. She couldn’t remember disliking a person so much in all her life. She walked toward Natasha. “I’d be happy to give Shane your infamous apple pie.”

“Famous,” Natasha corrected, extending her arms.

Cassie scowled down at the pie. One-inch strips of crisped-to-perfection crust weaved a seamless pattern over the top. “I’ll make sure he gets it.” She spun on one heel and headed for the steps. “And Natasha,” Cassie added. “You don’t have to worry about me cutting into this while he’s gone. I hate apple pie.”

"Not your traditional apple pie, this filling is caramelized apples held together with a very glossy, just-thick-enough apple syrup."

6 tablespoons unsalted butter
1/4 cup white sugar
1/2 cup brown sugar
1 pinch salt
1/4 teaspoon ground cinnamon
1/4 cup water
1 (15 ounce) package double crust ready
-to-use pie crust (such as Pillsbury®)
4 large red apples, cored and thinly sliced
1.Preheat oven to 425 degrees F (220 degrees C).
2.Melt butter in saucepan over medium heat. Stir in white sugar, brown sugar, salt, cinnamon, and water. Bring the syrup to a boil, stirring constantly to dissolve sugar, then remove from heat.
3.Unroll pie crusts, press one into a 9-inch pie dish, and place the apples into the crust. Unroll the second crust on a work surface, and cut into about 8 1-inch wide strips. Criss-cross the strips over the apples, or weave into a lattice crust. Crimp the bottom crust over the lattice strips with your fingers. Spoon caramel sauce over pie, covering lattice portion of top crust; let remaining sauce drizzle through the crust.
4.Bake in preheated oven for 15 minutes. Reduce heat to 350 degrees F (175 degrees C), and bake until the crust is golden brown, the caramel on the top crust is set, and the apple filling is bubbling, 35 to 40 more minutes. Allow to cool completely before slicing.
